Application: Benzaldehyde dimethyl ether is a liquid with an almond like aroma, found in potato seeds. Under acidic conditions, benzaldehyde is easily hydrolyzed to form benzaldehyde, but it is not affected by alkaline environments. It is an important form for preserving benzaldehyde due to the temperature of oxidants or reducing agents.
